The reason for her more endowed appearance is because she's not affected by Excalibur's side effects that prevent its user from aging further.
Her horse is named Dun Stallion (fate). And her breastplate is most likely modeled after a tournament (jousting) helmet called a Frog-mouth helm Stechhelm or Krötenkopfhelm
